Asparagus Quiche
This healthy crustless quiche is easy to make and great for parties. While a classic pairing with asparagus would often be a Sauvignon Blanc, the fresh crisp flavours of this Gruner Veltliner work equally well.
Ingredients
- 7 cups very finely sliced asparagus
- 3 onions, finely chopped
- 8 large eggs
- 1/2 cup any hard cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tsp salt
- Ground black pepper, to taste
- Paprika
- Cooking spray
Directions
- Preheat oven to 400F and spray mini muffin tins with cooking spray
- In a medium bowl, add eggs and whisk. Add both cheeses, salt, pepper, and whisk one more time
- Add asparagus and onions to each muffin tin then pour egg mixture on top. Sprinkle with paprika
- Bake for 45 minutes or until toothpick inserted in the middle comes out clean. Broil for a few minutes for a golden crust. Cool off a bit, turn out of muffin tin into wrappers to serve.
